Carrots! Carrots! Carrots!
Tuesday 22 June 2010 at 09:04 amCarrot tops are a delicacy at our house. They rank very high in the list of favorite bunny greens. I am one of those people you see in the store carefully examining all the carrot bunches looking for the best tops. You know the ones I mean, the fresh green ones with the highest possible top to carrot ratio. The end result is that, at any time, I have about 10lbs of topless carrots in my crisper drawer. So here comes the real dilemma – what to do with all those carrots? I asked this question recently of my fellow bunny slaves and got some good ideas. One person takes carrot dishes to all her church potlucks. I confess I have done this too, and luckily my family is fond of carrot cake. Another person gave me a recipe for carrot fritters that I just might try out. In my continuing search for ideas, here is my current favorite carrot-containing recipe. If you have a great idea for the endless supply of carrots, let us know! Maybe then we can all reclaim our crisper drawers.
